That’s why these macaroni and cheese bites are the perfect quick and easy dinner idea to please everyone.

There is something to be said for a good ole comfort food recipe, too. Am I right? And, mac and cheese has been a staple for me since I was a kid. What kid doesn’t like mac and cheese? But, there is something SO good about making mac and cheese from scratch instead of using a boxed recipe (as much as I love that stuff, too)

Ingredients:

3/4 cup Italian bread crumbs
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1 cup milk
4 cups cooked elbow macaroni (about 2 cups dry)
2 cups shredded cheddar cheese
1/2 cup baking mix
2 eggs

Directions:

Preheat oven to 400 and spray a 12 cup muffin tin with nonstick cooking spray. Place a pinchful of bread crumbs into the bottom of each cup. You will not use all of the bread crumbs. Set aside.

Melt butter in a skillet. Add flour, salt, garlic powder, pepper and milk and whisk. Heat on medium high, whisking frequently until bubbling. Let bubble for 2 minutes or until sauce is thicker. Remove from heat.

Stir in macaroni, cheese, baking mix and eggs and mix well.

Use a 3 tablespoon portion scoop to fill each muffin tin with macaroni and cheese. Top with remaining bread crumbs.

Bake for 10-12 minutes or until cooked through.

Makes 12 bites.
