Well it’s BACK TO SCHOOL time which means it’s that time of year again where “healthy yet portable lunches” are added to the list of parental priorities.

I can barely keep the names of my 3 kids straight, so when it comes to school lunches I need things to be easy.

School lunches don’t just need to be easy, they need to be brainless!

One thing I love about La Tortilla Factory wraps, is that they are so versatile, and this particular recipe was a big hit in my house. One trick I’ve found to get my kids to love and eat veggies is to add in other things they love with them. So, I thought it would be fun to take some tasty cream cheese which my kids love anyway, a wrap that mom and kids approve of, and add in some fun crunch with some healthy rainbow veggies.

Besides the fact that these wraps taste amazing, I love this recipe because I am a big fan of the fact that it is simple, easy to prepare and doesn’t take much time to whip up and throw into a lunch bag. And, it’s so much more fun than a boring sandwich for lunch.

Yield: 1 serving

La Tortilla Factory Veggie Wrap

La Tortilla Factory nutritious wraps can be used to change up any lunch in a fun exciting way. The different flavor wraps bring a ton a variety to the regular old sandwich options.
Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 2 tablespoons herb flavored cream cheese
  • 1/4 each of one red, yellow and orange pepper sliced thin
  • 2 tablespoons matchstick carrots
  • 1/2 cup fresh spinach or mixed greens
  • LA Tortilla Factory Whole Wheat Wrap

Instructions

  1. Wash and slice peppers
  2. Spread cream cheese onto wrap
  3. Place peppers and matchsticks in the center of the wrap and top with fresh spinach
  4. Roll wrap tightly and cut into 1" sections

Notes

Serve with fruit and nuts such as fresh blueberries and whole almonds

Veggie Wrap/Pepper & Spinach Wrap Recipe

Ingredients:
